Looking at my week ahead I think there will be a lot of leftovers to eaten this week.
Monday: Garlic pork roast with potatoes and onions with bagged salad.
Tuesday: Leftover sausage and potatoes
Wednesday: Leftover meatloaf stroganoff from last week and salad
Thursday: BBQ pork sandwiches, veggies, and salad or coleslaw
Friday: Weeknight pork chili, veggies and salad
The BBQ pork sandwiches and the weeknight pork chili are both made with the leftover pork roast from Monday night which makes life really easy. Having a menu plan also helped a ton with grocery shopping this weekend. I didn' t have to run to the grocery store yesterday and I don't plan to go today either. Last week I was there almost every day grabbing some random item.
